Refrigerated, low-agitation extraction

Starting point

For Japanese green tea, MAFF offers 10–15 g per liter refrigerated for 4–6 hours. Treat that as a style-specific beginning.

What you need

  • Clean covered pitcher
  • Refrigerator
  • Fine strainer

Method

  1. Use fresh potable cold water.
  2. Combine in a clean covered vessel.
  3. Refrigerate throughout extraction.
  4. Strain cleanly.
  5. Keep cold and drink promptly.

Watch for

Cold brew is not caffeine-free. Temperature, time, tea and ratio all affect extraction.
